Dinner for one can be fun. Inspired by @jillian.harris and her recipe except I substituted pesto for the feta and green onions for the white. I added zatar because I love recipes by @ottolenghi and used halibut as my choice of white fish. Lots of garlic and fresh tomatoes and olives. Cracked pepper, Himalayan pink salt, and olive oil. At the beginning of the lockdown I started to pain

At the beginning of the lockdown I started to paint the floor in my house. It was not only therapeutic, but beautiful, and it kept me preoccupied, and eased some of my anxiety. I painted the tiles behind the cooktop, and felt like my whole environment was transformed into a garden of beauty. Reflecting gives me a sense of how I have taken care of myself, through a most challenging time in life. When you enhance your space, you shift your thought patterns.
